Ingredients

  • 6 slices of thick-cut hickory smoked sliced bacon, chopped
  • 4 large potatoes, thinly sliced
  • 1 cup shredded extra sharp cheddar cheese
  • 1 tsp salt
  • 1 cup cheddar jack cheese, shredded
  • Chopped fresh scallions, for garnish

  2. Combine bacon, potatoes, extra sharp cheddar and salt in a large bowl and toss to evenly distribute. Layer potato mixture evenly into Dutch oven and top with cheddar jack cheese.
  3. Cover and bake until potatoes are tender and cheese is bubbling about 40-45 minutes.
  4. Remove lid and bake for an additional 5 minutes or until cheese is lightly golden-browned. Garnish with scallions and serve.
